92g unsalted butter softened
36g confectioners’ sugar
1 egg white
120g cake flour
20g milk powder
Matcha powder/green food coloring powder
- Soften the butter until when you press it with your fingers it leaves a clean indentation. Add in sugar, beat until light and fluffy. Add in the egg white and beat until pale yellow and fluffy. Add in cake flour and milk powder. Beat or mix until well combined.
- Take a scoop of the cookie batter (about 1/4 of the batter) to mix with cocoa powder until well combined. Transfer into a piping bag with the piping tip. Mix rest of the cookie batter with matcha (green tea) powder or green food coloring powder. Transfer into a piping bag with the piping tip.
- Preheat the oven to 320℉(160℃). Line the baking tray with parchment paper or baking mat. Pipe out the Christmas tree cookies on the baking mat. Send into the oven and let bake for 25 minutes. Cover the cookies with tin foil when there is still 10 minutes left. Take the cookies out of the oven and serve.
