Ingredients

Cocoa powder 10g

Hot water 20g

Vegetable oil 35g

Milk 65g

Cake flour 65g

Eggs 5

Sugar 50g

Lemon juice 2g

Vanilla extract 2g

 

Instruction:

In a bowl, mix cocoa powder and hot water, whisk until the cocoa powder dissolve. Set aside. In another bowl, mix vegetable oil and milk, whisk until well combined. Add in cake flour, mix until smooth. Take another bowl, separate the eggs. Mix egg yolks with the batter until well combined. Add in vanilla extract, mix until well combined. Use a hand mixer; add sugar and lemon juice into the egg white, and beat until it forms soft peaks. Fold the whipped egg white into the batter. Save 170g batter to mix with cocoa liquor, and put into a piping bag. Pour the rest of the batter into the pan, cover it with the cocoa batter. Use your finger or an icing spatula, to draw across the batter. Use a cake scraper to smooth its surface. Preheat the oven to 302(150), bake for 25 to 28 minutes.
