Chewy Dinner Bread


320g bread flour

210g milk

25g milk powder

45g granulated sugar

2.5g salt

4g instant yeast

40g unsalted butter



  • Preheat the oven to 338(170).
  • Put all the ingredients except butter into the stand mixer bowl, beat until the dough comes together. Add in the butter, beat until well combined and forms a dough ball.

  • Cover with plastic wrap and let rest for 15 minutes.

  • Dust the dough and rolling pin with some flour. Roll the dough into a rectangle, about 2.5 mm thick. Fold the dough into thirds, roll into a 0.8 cm thick rectangle. Fold in half, roll into a 1.2 cm thick rectangle. Trim the sides. Divide them into small rectangles, about 24 pieces. Cover with plastic wrap and let rise until doubled in size.

  • Send into the oven to bake for 15 minutes. Cool down and serve.
