Cookies with Coffee Cream Filling



135g unsalted butter

60g powdered sugar

2 egg yolks

200g all-purpose flour

15g cocoa powder

80g softened cream cheese

15g granulated sugar

10g coffee powder/instant coffee

70g heavy cream/whipping cream



  1. Soften the butter, add in powdered sugar and egg yolks, beat or mix until well combined. Add in all-purpose flour and cocoa powder, and mix until forms a dough ball. Divide into small pieces, roll into little balls, and use a rolling pin to press an indentation in the middle of each ball. Preheat the oven to 338(170) and bake for 20 minutes.
  2. In another bowl, add in softened cream cheese, granulated sugar and instant coffee powder, and mix well. Add in heavy cream, mix well.
  3. When the cookies are out of the oven, pipe the cream into the indentation of each cookie. Dust with cocoa powder and serve.
