Cranberry Bagels

Ingredients:

300g bread flour

190g milk

30g granulated sugar

4g salt

9g instant yeast

20g unsalted butter

40g dried cranberries

Steps:

  1. Put all the ingredients except dried cranberries into the stand mixer bowl and beat until all comes together. Add in dried cranberries, beat until well combined and forms a dough ball. Let rest for 20 minutes.
  2. Divide the dough into 8 equal pieces. Roll into small dough balls. Let rest for 20 minutes.
  3. Roll the dough balls out and shape into bagels. Let rest until doubled in size. Or you can set the oven to 95(35) and set the dough balls in the oven to rise until doubled in size.
  4. Preheat the oven to 200(392). In a pot, put in 500g water, and 20g granulated sugar, heat until simmer, put in each bagel, cook for 20 seconds each side.
  5. Line the baking tray with a baking mat or parchment paper. Send the bagels into the oven to bake for 16 minutes. Let the bagels cool down then serve.
