Ingredients:
3 eggs (around 60g each)
20g honey
50g granulated sugar
100g cake flour
2g baking powder
40g vegetable oil
Some sesame seeds
Notes: By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
Steps:
- In a clean bowl, put together eggs, sugar, and honey and use a hand mixer to beat until thickened, pale yellow and very puffy. Mix well baking powder and cake flour, sift into the mixture in thirds, gently cut the flour into the mixture until well combined. Add in vegetable oil, gently cut it in until well combined.
- Preheat the oven to 320℉(160℃). Grease the cupcake tin with some vegetable oil and dust with flour. Fill the cupcake tin with batter top with some sesame seeds. This recipe can make 7 honey cakes. Give the pan a tap or two, and send into the oven to bake for 25 minutes. Cool and serve.
