Cheesecake Scones are a delightful fusion of traditional scones and rich cheesecake, offering a tender and slightly crumbly texture with a creamy and tangy flavor. These scones are perfect for breakfast, brunch, or as a sophisticated afternoon tea treat.

The dough for cheesecake scones is made from flour, sugar, baking powder, butter, cream cheese, and eggs. The ingredients are mixed until just combined to create a tender dough that is rolled out and cut into triangular or round shapes. The scones are then baked until golden brown.

The addition of cream cheese in the dough gives these scones a rich, creamy flavor and a moist texture that sets them apart from traditional scones. They can be enjoyed plain or enhanced with add-ins such as fresh berries, chocolate chips, or a drizzle of glaze.

Cheesecake Scones can be served warm or at room temperature, often with a dollop of clotted cream, a smear of jam, or a dusting of powdered sugar. They are perfect for any occasion where you want to offer a delicious and elegant treat.

Cheesecake Filling

  1. In a clean bowl, mix well softened cream cheese and sugar until smooth. Set it in the fridge to cool.

  2. Finely crush 6 or more biscoff cookies. Set aside.

  3. Line the baking tray with parchment paper or baking mat. Preheat the oven to 356℉(180℃).

  4. In a clean bowl, bring together cake flour, sugar, baking powder, salt and vanilla extract. Cut in the butter and mix well.

  5. Add in milk and mix well. Add in finely crushed biscoff cookies and mix until well combined. Divide the cookie dough into six. Shape each into a small dough ball, make a hole in the middle and fill it with cream cheese. Top each with biscoff cookies. Send into the oven and let bake for 20 minutes.

By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
