Chestnut Buns are a delightful and comforting treat, featuring soft, fluffy buns filled with a sweet chestnut paste. These buns are perfect for breakfast, snacks, or as a dessert, offering a warm and inviting flavor that is both satisfying and delicious.

The dough for the buns is made from a mixture of flour, yeast, sugar, and milk, kneaded until smooth and elastic. The dough is then left to rise until doubled in size, ensuring a light and airy texture.

The chestnut filling is made from cooked chestnuts, sugar, and a touch of butter, blended into a smooth paste. This sweet and nutty filling is spooned into the center of each piece of dough, which is then sealed and shaped into smooth, round buns.

Once filled, the buns are left to rise again before being baked until golden brown. The result is a bun with a soft, tender crumb and a rich, sweet chestnut filling.

Chestnut Buns can be enjoyed warm from the oven or at room temperature. They are often garnished with a light brush of sugar syrup or a dusting of powdered sugar for added sweetness and shine.

These buns are perfect for family gatherings, tea parties, or any time you crave a comforting and sweet treat.

Chestnut Filling


  1. Bring together bread flour, cocoa powder, sugar, milk powder, milk, egg, instant yeast and salt into the stand mixer bowl. Beat in medium high speed until a dough ball forms. Add in butter, and keep beating until well combined. Take a small piece of dough and stretch a little too see if it can form thin and clear film. (windowpane test).
  2. Let the dough ball rise until doubled in size. Divide the dough into 8 equal weight portions. Roll into 8 round dough balls. Cover with plastic wrap and let rest for 20 minutes.
  3. In a clean bowl, bring together chestnuts, sugar, milk and butter, blend until smooth and together.

  4. Roll each dough ball flat, put in the chestnut mixture, wrap it up and seal the edges, shape into a triangle, pinch two angles together.

  5. Dip the bottom of the dough into water, take it out and cover the bottom of the dough with sesame. Place them in a lined baking tray. Let rise until doubled in size.

  6. Preheat the oven to 356℉(180℃). Brush the no sesame area with egg wash, send into the oven and let bake for 20 minutes or until golden brown.


*The high protein flour I use contains 13g protein per 100g flour.
