Description

Earl Grey Chiffon Cake is an elegant and aromatic dessert that infuses the delicate flavors of Earl Grey tea into a light, fluffy chiffon cake. This cake is perfect for tea lovers and those who appreciate sophisticated, subtly flavored desserts.

The batter for Earl Grey Chiffon Cake is made with flour, sugar, eggs, and oil, with the addition of finely ground Earl Grey tea leaves or brewed tea. The eggs are separated, and the whites are whipped to stiff peaks before being gently folded into the batter, creating a light, airy texture.

Once baked, the cake is light and spongy, with a moist crumb that melts in your mouth. The Earl Grey flavor is delicate yet distinct, making each bite a delightful experience. The cake is often finished with a light glaze or a dusting of powdered sugar, enhancing its elegant appearance.

Earl Grey Chiffon Cake is ideal for afternoon tea, special occasions, or as a refined dessert for any event. Its balance of flavors and airy texture make it a memorable and sophisticated treat.

Instructions

  1. Put Earl Grey tea, water, and milk into the pot, boil and lower the heat, put the pot cover on for 2 minutes. Get rid of the tea bags; add in salt, sugar, butter, and vegetable oil, stir until well combined. In another bowl, mix them with cake flour and cornstarch, set aside.

  2. Separate the eggs. Mix the egg yolks with batter, set aside. In another bowl, use a hand mixer, add in sugar and lemon juice, and beat the egg white until it forms soft peak. Mix the beaten egg white and egg yolks batter, mix well, add in vanilla extract, mix well, and pour into the cake pan. Send into the oven, 165℃(329℉) let bake for 45 minutes.

Note

By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
