Chocolate Chip Cookies are a classic and beloved treat known for their perfect balance of chewy and crisp textures, combined with the rich and sweet flavor of chocolate chips. These cookies are perfect for any occasion, offering a delicious and satisfying treat that is always a crowd-pleaser.

The dough for chocolate chip cookies is made from a mixture of flour, sugar, butter, eggs, and vanilla, with plenty of chocolate chips mixed in. The butter and sugar are creamed together until light and fluffy, and the eggs and vanilla are added to create a smooth and rich batter. The flour is then gently mixed in, followed by the chocolate chips.

The dough is scooped onto a baking sheet in small mounds and baked until the edges are golden brown and the centers are set but still slightly soft. The result is a cookie that is crisp around the edges and chewy in the center, with pockets of melted chocolate in every bite.

Chocolate Chip Cookies can be enjoyed plain or with a variety of additions such as nuts, caramel bits, or a sprinkle of sea salt. They are perfect for serving at parties, packing in lunchboxes, or enjoying as a comforting snack with a glass of milk.

These cookies are loved for their delicious flavor and perfect texture, making them a favorite among cookie lovers of all ages.

  1. In a clean bowl, put together rum and raisins, mix well and let rest for 30 minutes, sift, set aside.

  2. Softened the butter. Mix well softened butter, brown sugar and granulated sugar. Sift in all-purpose flour, cake flour, baking powder, baking soda and salt. Mix until well combined. Mix in 1 egg, add chopped chocolate, raisins, chopped walnuts/pecans and mix well.

  3. Take 45g cookie dough each time and roll into small balls. Line the baking tray with parchment paper or baking mat. Place the cookie dough balls on the baking tray. Cover it with plastic wrap and let them set in the fridge to cool for 30 minutes.

  4. Transfer the cookie dough balls to another baking tray, leave enough room for them to spread. Preheat the oven to 338℉(170℃). Let bake for 15 minutes or until golden brown.

By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
