Chocolate Lava Cake is a decadent and indulgent dessert that features a rich and gooey chocolate center surrounded by a tender and moist chocolate cake. This dessert is perfect for special occasions, offering a luxurious and delicious treat that will satisfy any chocolate lover.

The batter for chocolate lava cake is made from high-quality dark chocolate, butter, sugar, eggs, and a small amount of flour. The ingredients are melted and mixed together to create a smooth and velvety batter. The batter is then poured into individual ramekins and baked until the edges are set, but the center remains soft and gooey.

Once baked, the cakes are inverted onto plates and served warm, revealing the molten chocolate center that flows out when cut. The contrast between the tender cake and the rich, flowing chocolate creates a truly indulgent experience.

Chocolate Lava Cake can be garnished with a dusting of powdered sugar, a scoop of vanilla ice cream, or fresh berries for added elegance. The result is a dessert that is both visually stunning and incredibly satisfying.

This dessert is perfect for romantic dinners, special celebrations, or any occasion where you want to impress with a rich and indulgent treat. Its combination of a tender cake and a gooey chocolate center makes Chocolate Lava Cake a favorite among dessert enthusiasts.

  • 2 eggs
  • 30 g cake flour
  • 20 g granulated sugar
  • 50 g unsalted butter
  • 60 g bittersweet chocolate chips
  1. Preheat the oven to 392℉(200℃).
  2. In a clean bowl, melt the chocolate chips and butter over a bowl of hot water, mix until well combined. Set aside.
  3. In another bowl, put in 2 eggs and sugar, place the bowl over a bowl of hot water (the same bowl of water we used in step 1), use a hand mixer to beat until thickened.
  4. Sift in 30g cake flour, gently fold into the whipped eggs.
  5. Gently fold in the melted chocolate and butter mixture until well combined.
  6. Pour the batter into two ramekins. Place the ramekins on a baking sheet and send into the oven to bake for 8-10 minutes. Let the cakes rest until cool to eat.
By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
