Lady Fingers, also known as Savoiardi, are delicate and airy sponge biscuits that are essential for making the classic Italian dessert, Tiramisu. These biscuits are perfect for soaking up the rich flavors of coffee and liqueur, providing the ideal texture and taste for Tiramisu.

Lady Fingers are made from a simple batter of eggs, sugar, flour, and a hint of vanilla. The egg yolks and sugar are beaten together until light and fluffy, while the egg whites are whipped to stiff peaks. The flour is gently folded into the yolk mixture, followed by the egg whites, creating a light and airy batter.

The batter is piped into long, finger-like shapes onto a baking sheet and dusted with powdered sugar before baking. They are baked until golden brown and crisp on the outside but still soft and slightly spongy on the inside.

These delicate biscuits are perfect for soaking in a mixture of coffee and liqueur, allowing them to absorb the rich flavors without becoming overly soggy. Lady Fingers can also be enjoyed on their own as a light and airy snack or used in other desserts like trifles and charlottes.


Cooking Mode Disabled


  1. In a clean bowl, separate the eggs.

  2. Add lemon juice, vanilla extract, and sugar into the egg white. Use a hand mixer to beat until soft peaks form. Set aside. Add sugar into the egg yolks, and use a hand mixer to beat until pale yellow. Pour into the whipped egg white and gently fold it in until just combined. Sift in cake flour and gently fold in the flour until well combined. Transfer the batter into a piping bag.

  3. Line the baking tray with parchment paper or baking mat. Preheat the oven to 356℉(180℃).

  4. Pipe out about 18 lady fingers (10*1.5cm) on the baking tray. Give it a tap or two. Dust with powdered sugar. Send into the oven and let bake for 15 minutes.


By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
