Instructions

  1. In a clean bowl, bring together butter and sugar, beat until pale yellow and puffy. Add in 2 eggs and beat until well combined. Sift in cake flour and mix well. Add in lemon juice and lemon zest, mix until well combined.

  2. Preheat the oven to 170℃(338℉). Fill six cupcake liners with batter, send into the oven to bake for 28 minutes or until golden brown.

Note

By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
