Cake Base

  1. Preheat the oven to 302℉(150℃). Separate the eggs, and keep the egg white bowl in the fridge.

  2. In another bowl, mix well vegetable oil and milk, add in plain flour, and mix until well combined. Add in egg yolks and mix well. Set aside.
  3. Take the egg white bowl out of the fridge; add in lemon juice and vanilla extract (more, if you would like to reduce the egg smell), use a hand mixer to beat until it forms soft peaks. Take a scoop of whipped egg white to fold into the batter until just combined. And pour all the batter back into the whipped egg white bowl, gently fold the whipped egg white into the batter until just combined.
  4. Line the cake pan with parchment paper or baking mat, pour all the batter in, smooth the surface with a spatula, and give it a few taps before send into the oven to bake for 30 minutes.
  5. Let the cake cool down on the cooling rack before slice it.

Homemade Crushed Wafer

  1. In a bowl, put together softened unsalted butter and powdered sugar, use a hand mixer to beat until smooth. Add in egg white (make it two times) and beat until well combined. Add in plain flour, and beat until well combined.

  2. Line the baking tray with parchment paper or baking mat, spread the batter all over the baking mat. The layer should be thin and wide.
  3. Preheat the oven to 338℉(170℃) and bake for 10 minutes.
  4. Let it cool down on the cooling rack. Peel it off the baking mat, and crush it into crumbles.

Cream Filling

  1. In a bowl, put together heavy cream and sugar, use a hand mixer to beat until thickened.

Assemble the Cake

  1. Slice the cake base according to the size of your lunchbox.

  2. Start with one layer of cake base, one layer of cream, and one layer of crushed wafer. Repeat this step until you use all of them.
  3. Keep the cake in the fridge to cool for one hour or two can help keep its shape and gain an ice cream taste.
