The dough for mini cookies can be made from various recipes, including classic chocolate chip, oatmeal raisin, or sugar cookies. Each type of dough is mixed with ingredients like flour, sugar, butter, eggs, and flavorings, creating a rich and flavorful base for the cookies.

The dough is rolled into small balls and placed on a baking sheet, then baked until golden brown and slightly crisp on the edges. The result is a cookie that is soft and chewy on the inside, with a perfectly crisp exterior.

Mini Cookies can be enjoyed plain or decorated with a variety of toppings such as sprinkles, chocolate drizzle, or icing. They can be packed into jars as gifts, served at parties, or enjoyed as a quick and delicious snack.

These cookies are perfect for any occasion, offering a convenient and delightful treat that is sure to please. Their small size makes them perfect for portion control, and their delicious flavor makes them a favorite among cookie lovers.

  1. In a dry and clean bowl, bring together 2 eggs and sugar. Use a hand mixer to beat until thickened (triple in volume). Sift in cake flour, add in some black sesame (optional) and gently fold it in until just combined.

  2. Transfer the batter into a piping big.

  3. Preheat the oven to 266℉/ 130℃. Line the baking tray with parchment paper or baking mat.

  4. Pipe out the cookie batter on the baking mat. Send into the oven and let bake for 30 minutes or until golden brown. Let cool and serve.

By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
