The dough for potato buns is made from a mixture of flour, sugar, yeast, milk, butter, and mashed potatoes. The mashed potatoes add moisture and tenderness to the dough, resulting in a soft and airy bun. The dough is kneaded until smooth and elastic, then allowed to rise until doubled in size.

  1. In the stand mixer bowl, bring together flour, sugar, egg, milk and yeast. Beat in medium high speed until the dough comes together; Add in butter and salt, keep beating until well combined. Take a small piece of dough and stretch a little too see if it can form thin and clear film. (windowpane test). Let the dough rise until doubled in size.
  2. Wash and peel the potatoes. Cut them into chunks. Steam or boil them until tender. Drain the potatoes and transfer into a clean bowl. Mash the potatoes until smooth. Season with pepper and salt to taste.
  3. Chop up some bacon. Stir fry them over medium heat until crispy and brown. Mix well with the potato mash. Divide the potato mash into 6, shape into a ball; add half a slice of cheese in the middle.
  4. Divide the dough into 6, shape each piece into a small dough ball. Cover with plastic wrap and let rest for 20 minutes. Take one piece, press and knead into a round sheet, put the potato mash ball in the middle, wrap it up and seal the edges.
  5. In a bowl, bring together flour, milk powder and cocoa powder, mix well. Cover each dough ball with the mixture. Brush off extra flour, make some holes and dents on the dough ball to make it look more like a real potato. Let rest until 1.5 times bigger.
  6. Preheat the oven to 338℉(170℃). Let bake for about 20 minutes or until golden brown.
