Description

Tiramisu is traditionally made with layers of ladyfingers soaked in espresso or strong coffee, layered with a creamy mixture of mascarpone cheese, eggs, sugar, and a hint of liqueur such as Marsala or coffee liqueur. The layers are repeated until the dish is filled, and the top is dusted with a generous layer of cocoa powder.

The key to tiramisu’s texture is the mascarpone cream, which is whipped to a smooth, fluffy consistency. The coffee-soaked ladyfingers provide a moist, cake-like layer that absorbs the flavors of the coffee and liqueur, complementing the rich cream.

Once assembled, tiramisu is chilled in the refrigerator for several hours or overnight to allow the flavors to meld and the dessert to set. The result is a luxurious, melt-in-the-mouth treat with a perfect balance of coffee, cocoa, and creamy flavors.

Instructions

  1. Separate the eggs. Mix egg yolks with 32g sugar until well combined. Add in softened mascarpone cheese, mix until smooth. Add in some rum, mix well.

  2. Use a hand mixer to beat the egg white (add in 10g sugar) until frothy. Mix/fold the egg white into the mascarpone cheese mixture until combined.

    Wrap the bottom with plastic wrap if you use a cake mold.
  3. Dip ladyfingers each side quickly in espresso. Place closely to form a layer. Spread the half of the cream on it. Place another layer of ladyfingers, and then rest of the cream. Smooth the surface. Send into the fridge to chill until set.
  4. Dust with cocoa powder and serve.

Note

This recipe requires pasteurized eggs.
