Difficulty: Beginner
Servings: 6
Best Season: Suitable throughout the year

Lemon Crepe Cake with Lemon Curd Top is a refreshing and elegant dessert that features layers of delicate crepes filled with a creamy lemon filling and topped with a tangy lemon curd. This cake is perfect for any special occasion, offering a light and citrusy treat that will delight guests.

The crepes are made from a simple batter of flour, eggs, milk, butter, and a touch of sugar, cooked until thin and lightly golden. Each crepe is spread with a creamy filling made from whipped cream or pastry cream mixed with lemon zest and juice. The crepes are then stacked one on top of another, creating a multi-layered cake.

Once all the crepes are stacked, the top is generously spread with a smooth and tangy lemon curd made from lemon juice, zest, sugar, eggs, and butter. The lemon curd adds a bright, citrusy flavor that complements the creamy filling and delicate crepes.

The result is a cake that is light, airy, and bursting with lemon flavor. Lemon Crepe Cake with Lemon Curd Top can be garnished with additional lemon zest, edible flowers, or a dusting of powdered sugar for added elegance.

This dessert is perfect for spring and summer celebrations, brunches, or any occasion where you want to offer a unique and refreshing treat. Its combination of tender crepes, creamy filling, and tangy lemon curd makes Lemon Crepe Cake a favorite among citrus lovers.

Lemon Curd

  1. Mix 1 whole egg, 1 egg yolk, sugar, butter, and lemon juice into a pot, stir with a whisk until it gets thicker (texture like mayonnaise). Once it is done, pour into the mold (save some to mix with the filling cream), chill until still (gain a jelly texture).

  1. In a bowl, mix milk, sugar and butter, stir over a pot with simmering water to melt the butter or you can use the microwave oven to help. Mix with rest of the ingredients, whisk until smooth, then run them through a fine mesh strainer twice. Heat the non-stick pan, when the pan is hot, pour in a scoop of batter, let the batter run through the pan and form a thin layer. When it starts to bubble (including the corners), gently peel the layer off and let it cool on a cooling rack. Repeat the process until the batter runs out.

  1. Put all the ingredients into the bowl, use a stand mixer, and beat until it forms soft peaks.

  1. One layer of crepe and one layer of whipped cream. Keep repeating this process until you run out of crepes and cream.
