Chocolate Chips Cookies
Ingredients
100g all-purpose flour
60g cake flour
2g baking powder
2g baking soda
30g brown sugar
30g granulated sugar
100g unsalted butter
1g salt
1 egg
120g chopped chocolate
30g raisins
30g chopped walnuts/pecans
Notes: By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
Steps:
- In a clean bowl, put together rum and raisins, mix well and let rest for 30 minutes, sift, set aside.
- Softened the butter. Mix well softened butter, brown sugar and granulated sugar. Sift in all-purpose flour, cake flour, baking powder, baking soda and salt. Mix until well combined. Mix in 1 egg, add chopped chocolate, raisins, chopped walnuts/pecans and mix well.
- Take 45g cookie dough each time and roll into small balls. Line the baking tray with parchment paper or baking mat. Place the cookie dough balls on the baking tray. Cover it with plastic wrap and let them set in the fridge to cool for 30 minutes.
- Transfer the cookie dough balls to another baking tray, leave enough room for them to spread. Preheat the oven to 338℉(170℃). Let bake for 15 minutes or until golden brown.
