Dough

Ingredients:

200g bread flour

100g milk

1 egg

20g granulated sugar

3g instant yeast

2g salt

20g unsalted butter

 

Steps:

  1. Put all the ingredients except butter in the stand mixer bowl, and knead until it is smooth. Add in unsalted butter; keep kneading until well combined and a dough ball form. Divide into six equal pieces and roll each piece into small balls. Let rise until doubled in size.

 

Topping

Ingredients:

3g coffee powder/instant coffee

5g warm water

30g egg

35g granulated sugar

40g flour/plain flour/all-purpose flour

40g unsalted butter

 

Steps:

  1. Put coffee powder, granulated sugar, and warm water into a bowl, mix until smooth. Add in egg and flour, mix until well combined. Add in softened unsalted butter, mix until smooth. Put the batter into a piping bag.
  2. Pipe the coffee batter onto each risen dough ball.
  3. Preheat the oven to 356(180) and bake for 18 minutes.
