Ingredients
286g bread flour
12g milk powder
1 small egg (around 55g with shell)
20g granulated sugar
170g milk
3g instant yeast
3g salt
20g unsalted butter
Coating
Grated parmesan cheese
Garlic Filling
25g softened unsalted butter
15g garlic, smashed and minced
1g salt
Parsley flakes
Steps:
- In a stand mixer bowl, bring together bread flour, milk powder, sugar, yeast, egg and milk, beat until a dough ball forms. Add in unsalted butter and salt and beat in high medium speed until well combined. Transfer the dough ball into a bowl (Lightly dust the bowl with some flour), and let rest until doubled in size.
- In another bowl, soften the butter; add in minced garlic, salt and parsley flakes and mix well. Transfer into a piping bag. Set aside.
- Divide the dough ball into 6 equal pieces. Roll into 6 dough balls. Let rest for 15 minutes. Knead and roll it flat, fold in half (both sides inward) and pinch both sides to seal (shape like a small football). Coat them with grated parmesan cheese. Line the baking tray with parchment paper or baking mat. Place them on the baking tray about 2 inches apart. Loosely cover with plastic wrap and let rise until doubled in size.
- Slash each dough in the middle and pipe in the garlic filling. Preheat the oven to 365℉(185℃) and bake for 18 minutes (or until golden brown).
