Lemon Cupcakes


100g unsalted butter

90g confectioners’ sugar

2 eggs (around 55g each)

90g cake flour

12g lemon juice

10g lemon zest



  1. In a clean bowl, bring together butter and sugar, beat until pale yellow and puffy. Add in 2 eggs and beat until well combined. Sift in cake flour and mix well. Add in lemon juice and lemon zest, mix until well combined.
  2. Preheat the oven to 170(338). Fill six cupcake liners with batter, send into the oven to bake for 28 minutes or until golden brown.
