Ingredients
100g unsalted butter
90g confectioners’ sugar
2 eggs (around 55g each)
90g cake flour
12g lemon juice
10g lemon zest
Steps:
- In a clean bowl, bring together butter and sugar, beat until pale yellow and puffy. Add in 2 eggs and beat until well combined. Sift in cake flour and mix well. Add in lemon juice and lemon zest, mix until well combined.
- Preheat the oven to 170℃(338℉). Fill six cupcake liners with batter, send into the oven to bake for 28 minutes or until golden brown.
