Lemon Tiramisu

Lemon Tiramisu


Lemon Sauce

120g fresh lemon juice (3 lemons)

1 tsp lemon zest

3 eggs

100g granulated sugar

2g salt

28g unsalted butter


Tiramisu Cream

300g mascarpone cheese softened

60g sugar

120g lemon sauce

260g heavy cream



18 ladyfingers

180g water

50g sugar

50g lemon juice

1 tsp lemon zest



  1. Grab a pot, bring together lemon juice, lemon zest, eggs, sugar and salt. Keep mixing over medium heat until thickened. Add in butter, mix until well combined. Sift once, transfer into a clean bowl, cover with plastic wrap and keep it in the fridge to cool.
  2. In a clean bowl, bring together softened mascarpone cheese, sugar and lemon sauce and mix well. Add in heavy cream and beat until thickened. Mix well.
  3. In a clean bowl, mix well water, sugar, lemon juice and lemon zest. Dip each ladyfingers into the mixture, place closely to form a layer at the bottom of the baking dish. Spread some lemon sauce on the layer. Scoop in half of the tiramisu cream, smooth it out and place in another layer of ladyfingers. Coat the layer with lemon sauce, pour in rest of the cream and smooth it out. Let the dish set in the fridge to cool for 4 hours or overnight.
  4. Top the tiramisu with lemon sauce and lemon zest. Slice and serve.
