Mini Cupcakes
Ingredients
5 eggs
80g granulated sugar
30g vegetable oil
20g honey
2 tbsp vanilla extract
125g cake flour/low-protein flour
Notes: By cake flour, I mean low protein flour, which normally contains 7-9% protein (Mine is around 8%). Not self-rising flour.
Steps:
- Prepare some cupcake liners. Preheat the oven to 356℉(180℃).
- In a clean bowl, bring together 5 eggs, vanilla extract and sugar, use a hand mixer to beat until thickened. When you pull up the hand mixer, the batter will drop but hard to dissolve. Keep beating in low-speed while gradually add in vegetable oil and honey. Sift in cake flour and gently fold it in until well combined.
- Transfer the batter into a piping bag. Fill up each cupcake liner. Send into the oven and let bake for 20 minutes or until golden brown.
- Take the baking tray out of the oven, tap, let cool and serve.
