Orange Cookies
Ingredients
85g unsalted butter softened
30g confectioners’ sugar
18g eggs room-temp
145g cake flour/low-protein flour
2 tbsp orange zest
12 orange slices
Steps:
- Softened the butter. Add in sugar, beat until well combined; add in eggs, keep beating until pale yellow, light and fluffy. Sift in flour, add in orange zest and mix well.
- Fold the parchment paper in half. Transfer the cookie dough onto the paper, cover the dough with another half. Roughly flat the dough with hands and roll it flat to 2 mm thick. Grab a round cookie cutter and cut out round cookies. Peel off extra dough with an icing spatula. Mix them together, roll it flat and cut out more cookies. Keep the cookies on the parchment paper and cover them with another half of parchment paper. Chill for 30 minutes.
- Prepare 12 (according to the amount of the cookies) orange slices. Preheat the oven to 302℉(150℃). Line the baking tray with parchment paper or baking mat. Place the cookies in the tray, top each with a slice of orange, send into the oven and let bake for 30 minutes.
- Take the cookies out of the oven, let cool on the cooling rack. Dust with powdered sugar and serve.
