Ingredients
Bagels
300g bread flour
3g instant yeast
3g salt
15g granulated sugar
20g pistachio paste/spread
10g condensed milk
190g water/milk
Cream
100g softened cream cheese
8g pistachio paste/spread
8g sugar
Topping
Crushed pistachio
Steps:
- In the stand mixer bowl, bring together bread flour, instant yeast, salt, sugar, pistachio paste/spread, condensed milk and milk. Beat in medium-high speed until a dough ball forms. Take the dough ball out and divide into 6 equal pieces. Roll into 6 smaller dough balls, cover with plastic wrap and let rest for 15 minutes.
- Roll each dough ball flat and shape into a bagel. Let rest until doubled in size. In a pot, put in 500g water, and 20g granulated sugar, heat until simmer, put in each bagel, cook for 20 seconds each side.
- Line the baking tray with a baking mat or parchment paper. Sprinkle some crushed pistachio onto each bagel. Preheat the oven to 356℉(180℃). Let bake for 18 minutes.
- In a clean bowl, bring together softened cream cheese, sugar and pistachio paste/spread and mix well.
- Let the baked bagels cool down. Slice in half, spread the pistachio cream on, top with another slice and sprinkle/cover the middle layer with crushed pistachio.
