Ingredients

250g bread flour

160g milk

25g unsalted butter

1 egg

3g salt

3g yeast

20g sugar

 

Steps:

  1. Bring together bread flour, milk, egg, salt, yeast and sugar in the stand mixer bowl; beat in medium-high speed until well combined. Add in butter and keep beating until well combined. Take a small piece of dough and stretch a little too see if it can form thin and clear film. (windowpane test).
  2. Divide the dough ball into 6 equal pieces. Roll into smaller dough balls. Cover with plastic wrap and let rest for 25 minutes. Roll each dough ball flat, seal the edges and shape into ropes. Cover with plastic wrap and let rest for 16 minutes. Roll each rope flat, seal the edges and shape into longer ropes. Cover with plastic wrap and let rise until double in size.
  3. Brush the surface with water or mayonnaise, cover each with shredded mozzarella cheese, coat with more mayonnaise or another sauce you like. Dust with celery flakes.
  4. Preheat the oven to 374(190). Send into the oven and let bake for 15 minutes or until golden brown.
